I've already tried changing the iHeight and iWidth numbers in skyrimprefs.ini and done different 'set launch options' in Steam to force the resolution that way, too. A collection of the top 37 3440X1440 Game wallpapers and backgrounds available for download for free.
Any advice/suggestions will be much appreciated and if I have not tried it already I'll be excited to. I've done immense amounts of Googling and I'm getting very frustrated. If I take a screenshot or Fraps record for a second, everything still comes out at 2560x1440, so I'm inclined to believe they are 100% not working as intended.
